Bolter LOW Light
2024 Bolter is almost gone, down to less than ten cases remaining. The 24 has been a great wine. We switched up the blend a bit last year with 60% Pinot and only 40% Tannat, almost the exact opposite of normal, but it worked so well. A full-bodied rosé with focused acidity and slightly higher alcohol, ok maybe much higher.
Although I am somewhat saddened by the end of the 24 we are in process right now with the 2025! I have two Pinot Noir direct to press fermentations going right now. These will be the Pinot Noir component blended with Tannat much later in the year.
Willow Creek District Pinot Noir rose
The image above is a direct-to-press Pinot rosé destined for the 2025 Bolter. This one is savory with a light peach aroma. Color is a bit dark right now but should lighted up as the wine settles. In contrast, check out the second Pinot option below. This is an Adelaida District direct-to-press Pinot. A little less ripe and in active fermentation, which is why it looks cloudy and milky. Even though it is still about 5 Brix, the flavors and aromas are classic Bolter.

This is our 22nd harvest with Volatus and I am more excited and passionate about wine now than ever. This will be a killer vintage and the Bolter will live up to its legacy.
