The height of summer is the perfect time to taste and enjoy our extended selection of white wines. Although Volatus, and Paso in general, are known for our big, intense reds; we make some killer white juice. From crisp, Italian Falanghina to rich Chardonnay, you will find them here at Volatus. We will have the following whites open and ready to taste, compare, discuss, and enjoy.
-Charlie - 100% Chardonnay barrel fermented and aged in 70% neutral and 30% new French oak. Crisp and perfect, Willow Creek District Chardonnay.
-Dancing in the Moonlight - 100% Chardonnay barrel fermented and aged in 100% new French oak. Using barrels coopered in Burgundy for French Chardonnay, the Dancing is an incredible expression of Paso Chard.
-Fam-1 - 100% Falanghina. Native to the area just north of Naples, Falanghina finds its peak here in Paso. Bright acidity, medium bodied, and unique. You have to try this one.
-CAVU - 100% Viognier. Ripe and round with structured acidity. This is the red wine drinker’s white wine. Tropical with stone fruit and white florals, this will blow you away.
-Dash-Two - 100% Viognier. The opposite end of the Vio spectrum from the CAVU. Light bodied, elegant, and perfumy this is a fun side-by-side.
-PFM - 100% Grenache. A white wine from red grapes. Delicious Pure F!@#$%^ Magic in a bottle.
