One of my favorite things each year is ordering barrels in anticipation of the harvest. This year we are going with a mix of Seguin Moreau and Vallaurine French oak barrels. For the TOPGUN Cuvee program we are also using some Seguin Moreau American oak barrels with U-stave treatment. U-staves increase the surface area inside the barrel and we used them before back in 2004 when they were available with French oak, as well.
Once our barrels arrive I'll make a quick video showing the process of getting them ready for use. As Emeril used to say it is too bad we don't have "smell o vision." There is nothing quite like the intense aromas from a new, properly toasted French oak barrel.
